This recipe was inspired by Tone it Up’s Pumpkin Spice & Everything nice parfait. It’s a healthy breakfast that’s perfect for pumpkin season and easy to make!
- 1/2 small banana, sliced
- Your favorite granola or cereal
- 1 can 100% Pure Pumpkin
- 4 pitted dates
- Splash of coconut milk
- 1 tsp of cinnamon
- A few shakes of pumpkin spice to taste
- 1 scoop Vanilla protein (Try Vanilla Egg White Protein)
- 1 cup Vanilla Greek yogurt
Start by soaking pitted dates in distilled water for a 20 minutes to soften. Add soft dates to a food processor (or blender) and pulse into a paste, you may need to add a splash of coconut milk to blend if it’s too thick. Next, add pumpkin and blend. Once thoroughly blended, add protein powder, cinnamon and pumpkin spice and blend once more until smooth.
Use a tall glass or mason jar and layer pumpkin mixture and yogurt. Start with one layer of pumpkin about 1/2″ thick, then a layer of yogurt, then pumpkin again, and one more layer of yogurt. This should use up all of the yogurt and about 1/3 of the pumpkin mixture. Top with a half of a small banana and sprinkle of granola and cinnamon and enjoy this protein packed breakfast!
