Our current obsession involves food (we know, we know, what’s new!). While most of us avoid pasta-like dishes as much as we can, we have found the perfect and most delicious substitute – zucchini.
We know this isn’t breaking news since zucchini pasta isn’t necessarily new but we admit, we were a little skeptical of trying it. I mean, does it really satisfy that pasta craving? And surprisingly the answer is yes! The best part is that it is so incredibly easy to make.
What you’ll need to make 1-2 servings of “pasta”:
- 2 Zucchini’s
And that’s it!
(Note: The spiralizer we used is this one. Again, since we weren’t totally convinced we’d like this pasta we didn’t want to invest a ton of money in one. Overall this works great, we love the price point, and you get a tiny bit of an arm workout in too!)
How to eat it:
We love that you have options when it comes to eating it. You can either eat it raw or lightly cooked. Do not over cook or else it will get mushy. If you’d like to cook it a little bit, try the quick below recipe out:
- In a saucepan, add 1 table spoon of coconut/veggie oil and toss the zucchini in it.
- Add your favorite seasoning – the amount is up to you (we typically use 1 table spoon of Flavor God’s Garlic Seasoning)
- Keep in mind the zucchini cooks rather quickly so keep a close eye on it. We suggest cooking it for no more than 1-3 minutes as it will then get too soggy for our liking, but to each her own!
Regardless of whether you’d like to eat it raw or cooked, mix the zucchini in your favorite pasta sauce, pesto, salads, etc! It is a very versatile veggie and we can’t get enough of it!
